{seriously obsessed with spices}

everyone knows i love to cook.

for the most part, i keep it super simple when making meals. and my philosophy is :

quality in = quality out.

in other words – if you start with good ingredients, you generally end with a good meal…

i have only recently begun experimenting with spices in my cooking. i have been collecting spice jars over the last few years, as i was gypsy-ing around the country… and when i settled in a place i feel at home in, i felt super excited to finally display my spice jars.

i received these cool 3-tiered bamboo spice racks as a christmas gift, and i was so eager to get my spice jars out of the cabinet and onto the counter.

it’s the little things, right?!

something about seeing this beautiful rainbow collection of spices just makes me feel so happy inside. and it’s really been fun to experiment with the different aromas/flavours.

of course, in true audrey michelle form, i alphabetized my spices.

here’s what is in my collection :

i love finding produce in its most natural state – like this cool ginger root with the actual root still attached. the shape looks like some kind of animal or something, no?! i found it at the farmer’s market {of course} and i bought it mostly because it looked cool, but also because i just like to keep ginger around to nibble on. a lot of times i’ll make it into a tea with some lemon or just shave off a little bit and eat it after meals to accompany the digestion process.

ginger nutritional fun facts : 

ginger is great for stomach ailments such as nausea or diarrhea and can be great for helping keep motion sickness at bay. boiled as a tea, it has tremendous healing properties for common cold symptoms. ginger is also {surprisingly} high in b-vitamins. furthermore, ginger has wonderful anti-inflammatory properties, making it a fantastic support for healthy joints. 

 

{what real strawberries look like}

something i need to write about is how i spent my summer vacation… even though it’s long passed now.


one of the things that took up the majority of my free time this summer was participating in a community garden. it was basically one of the best things i’ve ever done for myself. growing your own food is truly one of the most rewarding things one can do! i would constantly remark, “all i did was put a seed in the ground – and this happened!” because i was constantly blown away at how cool nature is! my cucumber plants literally took over and my neighbours were calling it “the cucumber farm” 😉

the reason i bring this up is because i inherited a small strawberry plant in my summer garden plot. many of my neighbours had strawberry plants and i was fortunate to have one reseed itself in my plot. i didn’t get a lot of strawberries from it, but the few i did harvest looked like these strawberries. they were more cone-shaped than heart-shaped. and i’m telling you – the flavour in these things is just out of this world! SO sweet and SO juicy and SO delicious! better than any store-bought strawberry i’ve ever had!

do you ever compare conventional produce to farmer’s market produce?! the differences kind of blow my mind! the last time i was at the grocery store looking at apples, they were bigger than a softball! that’s just not normal. or fruit so waxy i could use it as a candle?! yikes.

for me, i like things to be as close to their natural state as possible. food, soil, water, me, and everything in between.

and that got me thinking about these strawberries i picked up at the farmer’s market last week. i was looking at them and decided to snap a couple fotos because i was thinking to myself, “i bet there are lots of people out there who don’t even know what REAL strawberries look like.”

these strawberries were SO full of flavour, too! something else that lacks in conventional produce. maybe it’s got something to do with mass producing them and lack of nutrient-rich soil.

anyway, i love that i can still find strawberries this time of year – as north carolina has a year-round farmer’s market and excellent long growing season. i hope to find some more when i go back this week!

{pink limes!}

i’m always super excited when i find a new fruit or vegetable to try. i found these pink limes at a natural food market over this past summer. so naturally, i couldn’t resist tasting and taking fotos of them!

on the outside, they are slightly different-looking than other limes…

they have some cool stripes going on a slight pink hue to them…

and on the inside… a DEFINITE pink hue!  so pretty! the flesh almost resembles a grapefruit!

of course, i added them to some sparkling water… which is so refreshing and delicious!

*nom nom, sip sip*

food fun facts :

limes are full of vitamin c and can help support healthy cells and tissue. furthermore, these particular “pink” limes are sweeter than your average lime and look great in a spread or as a garnish… also, they would work fantastically as a zest!

don’t you just love “baby” foods!?!?

i love swiss chard for so many reasons! not only is it good for you and high in vitamins like A and C, but it has a mild flavour and is great either raw or cooked. i adore all the colours – they are why i like to call swiss chard “nature’s paintbrush.” 🙂

{100-mile diet : taco lettuce wraps w/ local grass-fed beef}

i’m kind of obsessed with lettuce-wraps, as of late…

they are so easy to make and they are fulfilling without the guilt – gluten-free {if you want them to be}, quick and simple to prepare, and full of colour!

i also like to eat lettuce wraps during my “transition” months… like september, when the weather begins to change and my body begins to prepare for the heartier foods, but i’m not quite ready to let go of lighter fare. lettuce wraps meld the changing seasons together nicely.

i also LOVE grass-fed beef… for the nutrition, the health of the animal, the health of the planet… and the sense of pride i take when purchasing sustainable, farm-fresh food.

furthermore, i love to eat locally and support a “100-mile diet” as often as i can in my life. the 100-mile diet simply means you only eat food that is raised or grown within 100 miles of where you currently live. for me, choosing this lifestyle is the best way i can “vote with my dollars” in supporting a food-system that is sustainable, healthy, and good for our planet earth. i pair that choice with seasonal and organic eating, and it has proven to be the best lifestyle for me.

almost everything in these lettuce wraps was locally grown/made :

  • grass-fed beef
  • mexican spices
  • red leaf lettuce
  • cherry tomatoes
  • red onion
  • black olives
  • manchego cheese
  • homemade salsa
  • guacamole
  • yellow corn tortilla chips

once you brown your meat {try really hard not to overcook grass-fed beef!} and add in any spices you wish, simply pile it all up on a clean lettuce leaf and wrap it up and eat it!

i created my wrap in this order : lettuce leaf, beef, cheese, tomatoes, onions, olives, salsa, guacamole, tortilla chips..

and then…

nom nom… nomcrunch.. NOM NOM!!!

i get super excited when i see a rainbow on my plate. it just makes me happy to eat COLOUR!  and these wonderful bright purple sweet potatoes please both the palate and the eye.

i love how they grow in weird shapes, too.

have you ever had a purple sweet potato? i was first introduced to them many years ago at whole foods, as they tend to get the “cool” produce a lot. since then i have been seeing them in mainstream supermarkets and grocery stores, as well. unlike purple potatoes, these do not lose colour when you cook them.  in fact, they get BRIGHTER! it’s the coolest thing. {seasonal eating : wild chanterelle mushrooms}

i looooooove mushrooms, did you know this?!  it was amazing to discover that some mushrooms grow WILD up here in the high country. morels, boletus, and chanterelles, to name a few. and they are all something special.  when we received some wild chanterelles at the store, i eagerly nabbed some up so i could try them for the first time.  they are only available for a short time, and many of the “professional” foragers are extremely secretive about their “finding spots”  – and who can blame them!!?? – they sell for upwards of $20.00 a pound! we had a very rainy august here in the valley, and that made for some ideal mushroom hunting-and-gathering!

the peak season for chanterelles is in the fall… we have had a little frost in the mornings lately, so i’m kind of assuming they’re done for the year… but i could be wrong. i’m also just a little late in posting this blog 😛

i most likely have had chanterelle mushrooms at some point in my life and not realized it.  i’m sure at some fancy dinner in NYC, i had a couple in a dish once… but i wanted to truly truly taste the mushroom – being a purist and all – so i simply sauteed them in some awesome local pasture butter.

i sauteed the golden fungi for about 15 minutes, until they were nice and aromatic… then poured the whole mixture over a yummy baked russet potato…

{meatless mondays : my first millet experience}

i’ve been wanting to try to play with millet for a while now.  i have had a package of it on the shelves for a good bit now and i thought it was high time to give it a whirl.

i like to store things in glass jars… packaging just annoys me! 😛

millet is a tiny grain that reminds me of something from my youth… when cooked, it is almost like a pilaf. i read online that it also can turn into more of a mashed-potato like consistency, if cooked the right way. Continue reading

have you ever had golden beets?!  i just loooooove them!  i am pretty sure you can keep the skin on – so long as you scrub it pretty thoroughly.  i just peel mine.  these were so cute and little!

i usually just steam mine.  i find them to be so delicious, i don’t even add any S and/or P.  i think they have the most unique flavour. i just love to put them in salads or just munch on them alone… so good! beets are loaded with vitamins and minerals and they are just an all around amazing vegetable!
