{fantastic fungi – local edition}

y’all – i LOVE mushrooms! i always have. they fascinate me. i recently watched a super cool documentary that i highly recommend you check out – fantastic fungi. in discovering that film, i learned that mushrooms aren’t really a plant and they aren’t really an animal… they are like their own category. understanding that made me love them even more! i wish i could articulate just how amazing mushrooms really are. essentially they have an entire underground system in which they are all interconnected… and in some ways, mushrooms connect all of us, too! it’s just mind-blowing to learn and think about!

the weather has been just gorgeous here in maryland as of late. simply and purely perfectly autumn – warm sun, cool breeze, crisp air… the best! which means i want to get outside as much as possible! and so i went on a beautiful nature walk the other day and i must’ve seen at least 30 different kinds of mushrooms! i was constantly stopping and marveling at them. i snapped some pics with my phone and so i wanted to share what i saw.

i hope you enjoy and i truly encourage you to watch that film. i think i’ll watch it again and again!

{thirsty thursday – oktoberfest : from sierra nevada!!!}

it’s that time of year!

don’t you just LOVE autumn?!

the colours, the crisp air, the leaves falling, the clothing, the smell of pumpkin everywhere…

and it’s the time of year during which the only beer i’ll be drinking is oktoberfest! {pretty much}

and usually i’m sippin’ on some sam adams, cuz i just love that stuff. but i literally squealed with excitement when i discovered this sierra nevada oktoberfest!

i’m somewhat obsessed with sierra nevada. however, i only recently starting drinking their beers… and my goodness are they ahh-mazing!

a friend of mine told me that sierra nevada has been tested/known for their extremely clean water… and in my opinion, this greatly effects the taste of their brews. i don’t know quite how to explain it, but there is something distinguishably different about sierra nevada beer, and not just this wonderful oktoberfest. it makes sense to me that it could have something to do with the natural cleanliness and quality of their water.

furthermore, i love SN’s oktoberfest because it was brewed in collaboration with an old-school 19th century german brauhaus, using their recipe!!! the brewery is one of the oldest in the country… and i mean, it doesn’t get much more authentic than that!

and this stuff tastes incredible!

sierra nevada claims this is a ONE TIME ONLY release – so get your hands and taste-buds on some as soon as you can!

{pickled gherkins}

when i say, “gherkins” – what is the first thing that comes to your mind?

for me, it’s the movie dirty dancing.  weird, right?!  there’s the scene where neil is asking baby if she is hungry, and he’s looking in the fridge… “leftover cabbage roll, fruit salad…?  sweet gherkins?!”  😛

anyway… i don’t really like sweet pickles. but i do love dill pickles. and when i found these *adorable* baby gherkins, i literally squealed in excitement! apparently, they are also known as “cucamelons.” {teehehee}

they are slightly sour, and very juicy!  which, i admit, was a little surprising.  i also read that they are very easy to grow… which makes me totally want to try to include some in the garden next year!

{refusing to let go of autumn…}

i went for a hike a couple weeks ago in snowmass, where i used to work last winter.. and i was shocked at how much colour was left on the trees all around!  the aspens were still an amazing mix of colour and no colour… i just love them so much! the peaks were dusted with snow, and it was a sight to behold!

when i very first came to snowmass last year, it was october 22nd.  it was the day of my interview and i remember seeing very little colour left on the aspens in the area. i though to myself, ‘what a sight this must be in autumn!’ and i was soooo hopeful i would get out to see it this year!  i’m way grateful there was still some amazing colour on the trees and hills in this beautiful mountain town!

{fried green tomatoes}

happy october!  are you loving the fall colours where you live?! this is my favourite time of year – i just love autumn!  it’s also when i was born, so i feel most alive during this season.  i’ve also been feeling very lethargic and sleepy… but i suppose that just comes with the change in season and light.  i kind of wish i could just hibernate all winter… snuggle with callee more and eat tons of comfort food.

i’ve been wanting to make fried green tomatoes for a while now… what, being born in the south and all, it only seemed fitting.  i can’t believe i had never tried to make them before!  have you?!  when i spotted these perfect tomatoes, i was inspired and excited. so – i practiced the KISS method :

AND delicious!!!!

i fried my green tomatoes in real sweet cream butter after slicing them about 1/3 inch thick, then dipping them in flour, then egg, then bread crumbs with a little S&P.  i finished the ‘maters off with a topping of freshly-grated parmigiano reggiano. super simple, super easy, and super yummy!

i totally fell in love… with this great little town… paonia.  i actually considered moving there before i moved to my little neck of the mountains… but i hadn’t yet visited and i’m super glad i had the opportunity to this week! i had heard that there were farms up in paonia where you could pick your own produce for a nominal fee… and obviously – i was all over that!

the season for peaches is almost over, but orchard valley farms still had plenty of trees to harvest from! i had never done anything like this, it was quite the experience! ❤

i love love love this quote!

as i was looking for a foto to post today, i thought about reflections… and how as individuals, we are all reflections – of each other.  any time you like something in another person, you are really liking or honouring something within yourself – a quality you possess, albeit possibly dormant.  and likewise, if there is something you do NOT like within another, it is often something you really don’t like within yourself… think about it.

so i say – let’s just try to focus on the things we love about ourselves and each other – since we are basically mirrors anyway, why not work to be the most benevolent mirror ever – so that when someone is in your presence, the only thing that will be reflected back to them…

…is LOVE.

{travel tuesday} — “the old mill” : autumn in north carolina

a few years ago i visited my uncle in north carolina.  i am itching to go back. i hadn’t really been to that part of the country in a long time!  see, i was born in south carolina, if you can believe it.  didn’t stay there very long, but i still claim to be somewhat a southern belle 😉 at least – my manners and kind heart are still very southern.  but don’t be fooled, i’ll still get down and sassy with ya, i won’t deep fry butter, and you’ll never catch me in a pair of heels!

anyway, i’m sad to say i can’t remember exactly where this is located – i googled it, but can’t find it.  there are apparently lots of “old mills” in north carolina -hA! my aunt was super excited to show me this place – and with just cause!  it’s gorgeous!  i doubt the leaves are still this vivid in colour, but you never know; those east coast autumns can linger!

{thirsty thursday} – homemade roasted pumpkin seeds w/ a belgian tripel

hope you all had a safe and happy halloween!  i just LOVE this time of year, don’t you?!  i love being in the kitchen more than normal… and i love busting out my crockpot… and i’m even more eager to bust out my vitamix!!  i will be doing that this weekend when i am basically a personal chef for my best friends in the rockies 🙂

i also love making my own pumpkin seeds.  they are one of my favourite snacks, and when pumpkins are on sale –  so what better time to make some?!  i paid 2 bucks for my pumpkins on a one-day sale.  i would say these average sized pumpkins yield about 2-3 cups of seeds – that’s a decent value! {travel tuesday} — i recall… central park and fall…

it’s really hard to imagine new york city under water right now.  the subway is shutdown, 1.5 million people without power – my former roommate included. I WAS JUST IN NEW YORK LAST WEEKEND!!!  i’m so glad i dodged the bullet that is frankenstorm.  my heart goes out to all of those who are struggling from the effects of this monstrous event.  of course, i’ll always think of new york when i think of the east coast.

last night, i was watching the david letterman show and as he was listing the “top ten rejected frankenstorm names” i began to wonder why no one was laughing… “too soon?!”, i thought… but then i realized that no one was in the audience, and he was recording anyway. jimmy fallon did the same thing.

i’m visiting NYC in three days… and i actually kind of got a little nervous.  for real legitimately nervous… what?!  i lived in manhattan for 3 glorious years, and i ran the LES.  why am i nervous?!  it’s like i’m going to rekindle a former relationship or something.  haha

i’m definitely bringing my camera with me, and although i won’t get up to bear mountain park {where these images were taken}, i do hope to catch a glimse of a few of these colours throughout central park or the like.
