{radical radishes}

y’all know this girl just loves alliteration 🙂

i also love radishes! especially when they are in season (as they are now) and locally grown!

just look at how imperfectly perfect this little radical radish is!

it’s been a busy start to the year over here at food and foto dot com. i genuinely have had SO MUCH going on! and we had a ton of snow where i live and it’s just been gray and wet and cold for weeks. i am so ready for the change in temps and more sunshine and planting and growing food!

it’s been far too long since i have honored my own commitment to maintaining consistent posting on my blog. i am almost at the point of removing myself entirely from social media and focusing solely on my blog. that may seem extreme, but something is pulling at me to get away from social media, for lots of reasons. as weird as it may sound, i kind of miss sitting in front of a computer. not like, all day long, but as i type this out i am realizing just how much time i spend on my tiny rectangle (my nickname for my phone.) it’s a fantastic tool, obviously, but using my thumbs to type or holding it in my hand all day long, voice texting everything… i dunno where i’m going with this… but is it just me or do computers almost seem old school now?! haha… it’s just weird.

anyway, i really do enjoy sitting down and typing out an email or a blog… maybe because i’ve always been a pretty good typer and i am getting older so a bigger screen serves me better. or maybe it’s because i feel more present, less distracted, less “influenced”… whatever the case may be, i feel the strong pull to focus more on my blog and less on those other platforms. i hope you will stay along for the ride.

apparently this post was not really about radishes, haha. BUT – fun food fact : radishes are a good source of vitamin c, iron, and calcium. they come in many varieties (this is my fav), they are super easy and quick to grow, and so rewarding to harvest during the first weeks of spring planting. ALSO – they are great pickled and even roasted! my favourite way to enjoy them is the traditional french culinary way – thinly sliced with some grass-fed butter and flaky salt on top! nom nom.

{foodie friday : farm fresh fried egg}

most of the time… it’s just… the simplest things… that bring me happiness…

like this perfectly cooked sunny-side up egg from a local chicken mama friend… lightly pan-fried in local grass-fed butter… with a beautifully-coloured yolk and custardy-center… isn’t it so pretty?!

if you saw my last post, you know that my sweet kitty is no longer with me… and i still feel that loss on the daily… especially when i make eggs… callee always loved them and she could smell them from all the way on the other side of my apartment when i was making them in the kitchen… after i was done eating, i would always let her lick the plate… and in her later days in life, i would make a special egg just for her… because she was always worth it… ❤

farm fresh eggs are just so beautiful! and they are so much more nutrient-dense than store-bought eggs!


 

i hope to have backyard chickens one day in the near future!

i just love all the colours!

and the flavour can’t be matched! farm fresh is the best!

i just love the variety… eat the rainbow!

{100-mile diet : taco lettuce wraps w/ local grass-fed beef}

i’m kind of obsessed with lettuce-wraps, as of late…

they are so easy to make and they are fulfilling without the guilt – gluten-free {if you want them to be}, quick and simple to prepare, and full of colour!

i also like to eat lettuce wraps during my “transition” months… like september, when the weather begins to change and my body begins to prepare for the heartier foods, but i’m not quite ready to let go of lighter fare. lettuce wraps meld the changing seasons together nicely.

i also LOVE grass-fed beef… for the nutrition, the health of the animal, the health of the planet… and the sense of pride i take when purchasing sustainable, farm-fresh food.

furthermore, i love to eat locally and support a “100-mile diet” as often as i can in my life. the 100-mile diet simply means you only eat food that is raised or grown within 100 miles of where you currently live. for me, choosing this lifestyle is the best way i can “vote with my dollars” in supporting a food-system that is sustainable, healthy, and good for our planet earth. i pair that choice with seasonal and organic eating, and it has proven to be the best lifestyle for me.

almost everything in these lettuce wraps was locally grown/made :

  • grass-fed beef
  • mexican spices
  • red leaf lettuce
  • cherry tomatoes
  • red onion
  • black olives
  • manchego cheese
  • homemade salsa
  • guacamole
  • yellow corn tortilla chips

once you brown your meat {try really hard not to overcook grass-fed beef!} and add in any spices you wish, simply pile it all up on a clean lettuce leaf and wrap it up and eat it!

i created my wrap in this order : lettuce leaf, beef, cheese, tomatoes, onions, olives, salsa, guacamole, tortilla chips..

and then…

nom nom… nomcrunch.. NOM NOM!!!

and i’m kind of obsessed with tomatoes… i eat them with almost every meal, it seems. i love the colourful variety of them.  little, big, funky shaped, speckled… deep colours, bright colours…

i especially love to make little snacks with tomatoes – any way i can.

and so, i present to you… the most adorable mini-caprese stacks ever.  at least by my standards.

{sunday brunch for judi – and a very happy mothers day to EVERY WOMAN out there!}

i miss my mama.  today and all week. i’ve missed her since april 14th of the year 1993.  this time of year is hard for me – i won’t sugar coat that. sometimes randomly, i’ll think of something that reminds me of her and it will be hard. it never gets easier. however, i find comfort when i spot a penny on the ground, or when i catch a glimpse of myself in the mirror and do a “double take” because i look so much like her… and i find great comfort in knowing that i am now living in her favourite part of the world.  she was absolutely in love with these rocky mountains – and it’s an honor to live here… for her and for me.

if my sweet mother judi were alive today – i would make her this simple and amazing brunch… which i’ve been eating every day for like a month now. i buy the ingredients from a local store here in town and it’s all organic, fresh, and farm-grown – you know, like how REAL FOOD SHOULD BE!!!! 😀
