{crab and veggie frittata}

7 Nov

oh and speaking of crab recipes… i made this yummy crab and vegetable frittata over the weekend and it was SO yummy! i made two small batches and i reheat them in my air fryer {one of the best investments ever!}

i hadn’t really planned to blog about this, but as i started making it i grabbed my camera and snapped a few fotos to document. as per usual, i try to use what i already have in the kitchen and in this case it was mushrooms, peppers, and onion.

so i chopped them all up and added in my crab meat.

i added a little dried chives, old bay seasoning, salt and pepper, and nutritional yeast, then heated the mixture up in a pan with a pat of butter on low until slightly cooked…

then poured the mixture into these cute little tins, and baked for 15 minutes in a 360 degree oven…

finally, i let the frittata cool for a bit, popped it out of the tin, and put it in the fridge so i could have them for breakfast/brunch in the mornings.

i love a frittata!

i miss my mama.  today and all week. i’ve missed her since april 14th of the year 1993.  this time of year is hard for me – i won’t sugar coat that. sometimes randomly, i’ll think of something that reminds me of her and it will be hard. it never gets easier. however, i find comfort when i spot a penny on the ground, or when i catch a glimpse of myself in the mirror and do a “double take” because i look so much like her… and i find great comfort in knowing that i am now living in her favourite part of the world.  she was absolutely in love with these rocky mountains – and it’s an honor to live here… for her and for me.

if my sweet mother judi were alive today – i would make her this simple and amazing brunch… which i’ve been eating every day for like a month now. i buy the ingredients from a local store here in town and it’s all organic, fresh, and farm-grown – you know, like how REAL FOOD SHOULD BE!!!! 😀

sunday brunch for judi :

– farm fresh organic eggs

– asparagus

– cippolini onions

– garlic

– bacon cubes

this dish is perfect for one – what with my cute little ramekins and all… but i do have a second one, and would love NOTHING MORE today than to be cooking for my mama and using the other one.

i lined the bottom of my ramekin with avocado slices, to start… Continue reading

{thirsty thursday} — mini-eggs florentine w/ a twist and my first vitamix smoothie!!

15 Nov

i’m really pleased with how cute and delicious these little treats turned out.

half the time i plan my meals and half the time i wing it with stuff i have around the kitchen.  only on occasion has that not worked out for me.  my roommate usually eats whatever i make anyway because he’s a wonderful guy, but there have been some creations even i had to pass up because it just didn’t turn out good.  haha – but i grab a spatula, put the apron back on anyway and try again 🙂

this time, it turned out brilliant.  didn’t see how it wouldn’t, either.  when you start with a basic classically good recipe, you can pretty much bet it’ll taste terrific.  these were no exception.

thirsty thursday and foto friday – combined! {breakfast pizza and beer, nom nom}

3 Aug

pizza and beer, anyone?!

breakfast pizzas are popping up all over pinterest and blog sites alike, and i was so eager to try one of my own.  after 14 days of cleansing, i have been obviously rather ravenous lately.  carbs, bacon, eggs, and cheese were all that would suffice last weekend.  so, i made my own organic breakfast pizza and served it with a delicious farmhouse saison… you’re going to want to try this.  Continue reading

pre-cleanse “last meal” comfort food

15 Jul

haha – okay, i’m actually not going to eat this today, but i did a couple weekends ago.  and i have a feeling after my upcoming 5-day juice and veggie cleanse, i’m going to want a big ol’ bowl of this!

biscuits and gravy.  — a southern classic.

many people do not know this about me – but i was born in south carolina. i usually like to say “i’m from all over” because i didn’t live there past my second birthday, but i guess it was long enough to learn to like collard greens and biscuits and gravy, hehe. actually – growing up, my grandma used to do a lot of southern cooking, which is where i learned how to prepare my carrots the way i do. i seldom eat biscuits and gravy anymore, but occasionally it’s just good comfort food. sometimes i like to have 2 breakfasts…

9 Jun

…or – one breakfast, and one brunch… 🙂

especially if it’s a weekend day and i don’t have to work.  i get up pretty early most days and i love having my cup of coffee as the sun beams in and i work on both blog images and my appetite.  typically i want a snack about an hour later and so this has become one of my favourite quick meals in the morning : i call it the BACH  {banana, almond, chia, honey} a friend helped inspire this — thanks michele! flower power brunch with creamed asparagus toast

15 Apr

that’s one long title.

this recipe was inspired from pinterest.  i love stumbling upon fun things like this – the flower eggs, i mean.  the creamed asparagus was an original recipe i braved without having any idea how it would taste… Continue reading
