and did you know that quinoa is considered a complete protein… which means it contains all 9 essential amino acids. this makes it a wonderful protein-source for vegans. the black beans in this recipe add in healthy fiber, which is a great combination with the quinoa!

{meatless mondays : double rainbow quinoa}

no, it’s not a typo. i called this dish “rainbow rainbow quinoa because… well – look at it. 😉

i wanted to use up some stuff in the fridge – like my shredded carrots and leftover cabbage… both of which, to me, can be a challenge to use up for one person. i find that quinoa is a great “anything goes” kind of dish. so when i’m looking to use up fresh veggies, i usually throw them in with quinoa. another reason i love quinoa is because it is a complete protein. basically what that means is it contains all 9 essential amino acids. this makes it a great grain for vegans or vegetarians.

rainbow rainbow quinoa – ingredients :

– 1/2 cup rinsed rainbow quinoa

– 1/2 cup chopped red cabbage

– 1/2 cup shredded carrots

– 1/4 finely chopped onion

– 2 cloves diced garlic

– 1 cup raw baby spinach

as i mentioned saturday, i harvested my first tomato from my early girl tomato plant… it was so exciting!

that’s a mouthful, and a really long title for a blog…but that is essentially what is in this dish, and to leave out any part just seamed wrong.  those are all amazing and wonderful things and when you put them all together you get this incredible dish :

{light and fresh quinoa pasta}

happy first day of spring!  i got the fever, do you?!

it seems like everywhere i look, i read and hear more about gluten-free products.  i have opinions about wheat and gluten and the heightened sensitivity sweeping our nation, but i’ll save them for a day when i decide to get on my soapbox again…

while i am not aware of any sensitivity to gluten personally, i have to admit i like eating gluten-free pasta a lot these days.  it’s much lighter compared to regular pasta and i just find it to be a great any-time food because of that. excellent for the spring season, as it’s waist-line approved!

i am in love with this pasta from ancient harvest.  it’s made mostly from quinoa and corn.  i love their products – i also buy their polenta.  they use non-gmo corn and it’s also organic… and as i mentioned, gluten-free!  those are three big pluses in a packaged product for me! Continue reading

black bean quinoa w/ heirloom tomatoes and pale lager

yep, that says pale lager.  i had beer, too!!  🙂

so, this was my first “solid” meal after my cleanse.  this was the first grain and/or legume i had in 7 days!  so weird. hard to believe i made it through that cleanse.  the middle ground was definitely the hardest, but today i feel great!  i also did a ton of “other” cleansing last night to include a calcium bentonite clay mask, mustard seed bath, sage-smudging, and meditation by candlelight and incense.  i literally feel anew today.  it’s a weird space to be in, actually. i’m not entirely sure what the next step is.  kind of a void, if you will.  but it’s not a negative thing. it’s just that i feel so fresh and new and it’s like i want to reinvent myself and the world around me… i can’t help but think of one of my favourite bloggers when i say that – it’s like i want to create a new mantra for my life… and so i will.

today it started with gratitude, snuggles from my kitty, yoga {this video is similar to my morning practice – also what got me started doing yoga!}, and a detox tea.

another {vegan} Qrunch burger meal

i am quickly becoming addicted to these tasty delights.  Qrunch burgers are yummy quinoa patties and are great source of complete proteins without any dairy, soy, gluten, or wheat and they are vegan. frozen, but previously cooked, delicious qrunch burger patties are a marvelous and easy way to get whole grains into your diet — and seriously, they taste SO GOOD!

i’m pretty sure i have mentioned Qrunch burgers before… they are ahh-mazing. a coworker introduced them to me a while back and i have been hooked ever since.  i made my quinoa patty benedict with them once, and i have also just eaten them as a side dish.  i was inspired by the seasonal vidalia onions available right now.  this is oh-so-simple, too.  i could’ve easily eaten two, as well.  🙂 Continue reading
