that’s a mouthful, and a really long title for a blog…but that is essentially what is in this dish, and to leave out any part just seamed wrong. those are all amazing and wonderful things and when you put them all together you get this incredible dish :

i mean, seriously though – it’s cute… sure – it’s pasta, but it’s cute. 😛
i’ve mentioned this pasta before – i love it for a bunch of reasons, including the fact that it is non-gmo, organic, and gluten-free.
these tomatoes just looked too good to pass up…
and once again, cute!
just look how cute they are… and so oddly-shaped… nature is so cool.
spring ramps are one of my favourite things ever.
spring ramps chopped in a little EVOO…
simmer tomatoes…
let tomatoes burst and squish out juices…
toss in veggies – i used some zucchini, roma tomatoes, and english peas…
add water as desired and simmer until veggies are tender… i like to ensure my english peas still have a little crunch 🙂
finish with a healthy dash of salt and pepper and pour over cooked pasta {according to box, about 9 minutes}
i also like to make a big batch and eat it for a few days. another reason i love this dish – it’s good hot or cold…
super colourful and pretty and healthy… easy on the waistline and delightful on the taste-buds… it’s all around good!

Wow this dish looks yummy! You might have encouraged me to try quinoa pasta. Never tried it, but it sounds like it would be a good alternative. And ramps, I seriously need to try them too. Great recipe 🙂
