{spring is springing… again!}

i was recently having a discussion with a dear friend the other day about rebirth and resurrection and cycles of life, etc. and i was thinking about how gardening is one of the most fascinating things for me because plants go through all of the cycles… birth through death and then rebirth… it’s fascinating and marvelous to witness. springtime is so incredible because we get to be renewed with LIFE again… each and every time.

it has been a simply marvelous spring season here in maryland! we have had lots of rain lately, so everything looks so lush and green and vibrant! i just can’t help but pause to admire all the beautiful blooms up and down the streets and in peoples yards and gardens! i snapped a few fotos with the iphone, and here are some images of the beautiful flowers i’ve been seeing lately on my nature walks… 🙂

{garden fresh strawberries}

aren’t these just the most beautiful strawberries you’ve ever seen?!

and i promise you, they taste better than they look, if you can imagine 😉

fun food facts :

strawberries contain more vitamin c than oranges. they are also high in antioxidants and are super easy to grow! they self-seed and make a fun little patch to pick from. they are the only fruit with seeds on the outside. some strawberries contain over 200 seeds! they have a short season, so continuous harvesting is necessary for optimum enjoyment. also, to maintain the sweet flavour, strawberries are better served at room temperature.

i definitely want to grow some {organic} cabbage again this year!

{saturdays in the garden – volume three}

things are moving along nicely at the community garden…

it’s so rewarding to interact with other people who are just as passionate as i am about gardening. having us all come together and work as a team to prep the beds and tend to the crops is just such a marvelous reality. it’s something i really wish that every single person on the planet could and would experience.

last week, we had some eagle scouts come and help work in the garden. it was quite fun seeing their excitement as they helped move tarps and logs and plant seeds. we uncovered some potatoes from last season and the boys were very eager to collect them all and “donate them” – which was so endearing.

i am forever grateful to be a part of this community garden and it pleases my soul so tremendously to engage in it all. my cucumbers, along with other plants, are sprouting and the peas are growing quite nicely… i can’t wait to share those fotos next week!

{saturdays in the garden – volume two}

some updates on my community garden…


 

my uncle helped me make repurpose some materials and make these trellises for my peas and cucumbers. last year, thanks to a good friend, i learned a lot about vertical gardening… particularly, how it helps in maximizing space. since my plot is only 4 x 8, i was adamant about making sure to get the most food i could growing in there.

in particular, peas and cucumbers. they were the most fun to grow last year, and i had quite the bounty. not to mention the taste – so fresh and delicious!

i do love my garden!

… i was housesitting, and this awesome little chicken was one of eleven that i had the fortune of feeding and watching while the owners were away… they are so cool!

… i had this for breakfast : a sausage & cheese croissant roll, two flax seed chocolate brownie muffins, and my trusty half caff americano {with a little cream}…

… i totally saw this dead snake in the road……….   oddly, the first one i’ve seen at all since moving here.

… i harvested these absolutely beautiful organic cherry tomatoes and some mixed baby greens from the garden outside of the house i was sitting…

… and i added in shredded chicken, olives, cucumbers, sharp cheddar, red onion, and dressed it in a french vinaigrette… YUM!

… i saw like, four billion ants…………   i wonder what they were all working on…

… i saw these carrot-tops poking through a cute little community garden…

… i ordered and devoured an entire 12 inch pizza called the “BLT” from my favourite local spot… it’s seriously like eating a blt on a round pizza pie : “crispy bacon, smoked provolone, garlic, onion & house-made sundried tomato pesto topped with shredded leaf lettuce tossed in our famous house-made ranch”  it’s one unique and delicious pizza. they serve the lettuce and fixins’ on the side so you can dress it by adding the lettuce topping at the end. it is AHH-MAZING! one of my favourite pizzas, for sure!!!!

i’m taking a much-needed long weekend and heading up the rocky mountains for a little getaway.  i’m hoping to gain some inspiration, clarity, peace, and get a little rejuvenated.  i may have some exciting news to share upon my return, as well 🙂

in the meantime, here are some fotos i took at a spot in glenwood springs, around this time, last year… not far from where i’ll be staying!
