i’ve been craving slash eating a lot of this lately :
classic grilled cheese and tomato soup… only, as per usual, i mix it up a little.
i use the most healthy bread i can find. usually something a little more dense like a multigrain – or in this case, a flax-seed bread. i opt for organic when i can… bread is expensive! and, instead of traditional tomato soup, i buy this from pacific foods. OH EM GEE, it is so delicious!! the red pepper makes it just a tad more flavourful and sweet and when you dip your grilled cheese in it, HOLY SMOKES!! just – just, do me a favour and go buy some. and then tell me how you’ll never want to buy any other tomato soup again…
i just use an organic butter in a saute pan and melt it down on low to medium heat. i toss in a little pepper – then i place one slice of bread down, top it with 2-3 divided slices of cheese, then top it with another slice of bread. throw in some tomato if you want, or go vegan and try it with just avocado… then, flip it over just once about 3-5 minutes in and finish it off by toasting to your liking… just be careful not to burn it!
so, i have had this meal at least 3 times in the last week. partially because it’s such great comfort food, and i’ve just found myself craving it. and partially because it’s soup season and it has been helping me to feel better…
a silly sinus infection won’t stop me from having a good beer, though. typically i’ll drink a brandy and ginger ale when i’m feeling icky, it’s my total go-to when i’m sick. but i had to share this beer with you all…
remember how i said i fotographed a wedding last weekend – well, the adorably creative bride and groom pretty much DIYed the entire event. save for locale, i think they hand-created just about every detail. right down to the drinks! they MADE all the beer for the entire wedding! i’m going to guess there was at least a couple dozen 6-packs there. and not just one kind of beer – they just went for it. 4 different kinds of yummy homebrew including this :
i know you want to try one but i’m sorry, you just can’t… 🙂
also, i find it hilarious that it was so ripe it was super foamy, as you can tell by the foto above. i will say – it was so amazingly delicious! and i was seriously shocked to find out it was the couple’s first time even trying to make beer! they’re so freaking awesome like that… i’m lucky to have met them!
oh, did i mention how we got snow here in denver last night?! our first of the year. we always joke here in colorado that one must plan their halloween costume around snow… because it usually hits around that time – little early this year. i expect we’ll be back up to 70 degrees and sunny by sunday… that’s just how colorado’s wacky weather rolls…
