{autumn is for all things pumpkin!}

particularly on halloween, right?!

as you know, i prefer to eat seasonally so i’m on my squash and pumpkin kick at the moment. the farmers markets are closing this weekend or next, so i want to get out and stock up before they are done for the season.

contrary to popular opinion, i don’t do pumpkin lattes. they are too usually sweet for me. i do, however, tend to eat my weight in pumpkin seeds!

i simply cut a pumpkin open, carefully dig out the seeds, soak them for about an hour, then toss them with some olive oil and S&P and throw them in the air fryer for about 15 minutes. they don’t last long… they are so crispy and delicious! this was the firs time i tried making them in the air fryer. i have always baked them, but i’m so glad i tried it because they turned out amazing and in less time! i am eager to make more.

once i’ve devoured half of my pumpkin seed supply {haha!}… i scoop out the roasted pumpkin guts, add a little water, blend in the vitamix, pour in a large pan with some homemade veggie stock, add some spices, and serve with pepitas and mini toasts… NOM NOM!

i made a huge batch of this soup and so i froze some, canned some, and shared some…

both of these recipes are on par with my motto – KISS – keep it seriously simple. they are also healthy and support the 100-mile diet concept. i hope you enjoy and please comment if you try or have ideas of your own to share!

a friend of mine gave me a sample of these delicious and interesting FINGER LIMES! yes, that is their name. and one can see why, eh?! they look like little nubby fingers…

after cutting one open, i remembered that i had tried them before! here’s part of the description i read :

“The globular juice vesicles inside these citrus fruits have been likened to a “lime caviar”, which can be used as a garnish or added to various recipes. The fresh vesicles have the effect of a burst of effervescent tangy flavour as they are chewed. The fruit juice is acidic and similar to that of a lime.”

those little vesicles are so fun to eat! they “pop” in your mouth and they flavour is intense!

i made a little bubbly water with my sodastream and squeezed in some of the finger limes and their juices, along with these halloween-themed ice cubes.

it was super yummy!

of course, the adults could add in a little vodka or libation of choice… 😉

when i was a kid and i would be lucky enough to have a glass of soda as a treat, i used to sit there with my mom and be like, “check it out ma, the bubbles are taking the elevator to the top!” and she would giggle… and to this day i remember that and thought of it when these little vesicles floated to the top of this glass. 😉

ohhhh, that childhood imagination.

i walked the “day of the dead” parade in my new town and got some fun fotos of some pretty stellar costumes and such.

i didn’t know much about dia de los muertos until just last week.  and now that i do – i gotta say – i’m kind of hooked 😀  i really want to prepare better and dress up next year.  it just looked so fun!

and i’m for celebrating diversity and culture! i miss those two things about NYC the most.  i just appreciate the differences we have, and i love learning about new cultures, or even existing cultures, but really getting immersed in the celebration! everyone here is so welcoming and wonderful.  i met some amazing people and i just had a great time!

{thirsty thursday – happy halloween : please enjoy responsibly!}

hey ya’ll

are you going to go out and/or dress up for halloween? i have an early morning friday, so i will probably keep it low-key and watch the nightmare before christmas or something… 😉

just wanna throw in my shameless two-cents of a plug here – please don’t drink and drive, have a DD.  and if you don’t have to be on the roads, just stay in. and why not give out healthy snacks instead of candy?  or better yet – do a TRICK!  no one does tricks anymore, we just toss “treats” in a bag and are done with it. can you just imagine the look on the kids faces when you bust out a bunny and a hat instead of twizzlers?  priceless  – better have a camera… 😉  i digress.

meanwhile, i’m all for enjoying a few libations for the event :

{whatever wednesday} — the halloween dog parade

this is about as self-explanitory as it gets.  i was originally going to post images of the halloween parade i walked in one year in new york, but there are far too many to sift through and i’ve had a very busy week. so, the next best thing is this.  i hear they’ve cancelled the parade in manhattan this year, so i doubt they’ll be doing this either – let’s live vicariously through my fotos, shall we?!

in manhattan’s east village – typically every year – they host a “halloween dog parade” — and yep, it’s as adorable as it sounds.
