i’m not feeling very well at all today. so this is going to be a quick and to-the-point post. a simple vegan recipe that i feel the whole family will love…
super easy to make, too. keeps well in the fridge, can be reheated, and of course – good for you! i had these quite a few times on my cleanse, as i could feel my body needing the protein.
begin with red creamer potatoes – they cook faster and are just better for this dish. you could use regular red potatoes, too…. or golden. just keep away from russet for this dish, they are more starchy and take longer to cook…
i leave the skins on mine because their is more nutrients in the skin. just scrub them really well and cut away and deep notches or particularly dirty spots. chop them up…. then boil them until just tender. drain, then smother potatoes in nutritional yeast and finish them off in a 350 degree oven for 10 minutes, until they begin to crisp and/or nutritional yeast sort of starts to stick to the potatoes.
add a little more nutritional yeast after removing from oven and toss in a large bowl with S&P, then serve.
nutritional yeast is a great source of B vitamins and is a complete protein – and that means it provides all nine essential amino acids which the body doesn’t produce on its own. great on popcorn, too!
