{toasted bread cheese!}

i know what you must be thinking – “BREAD CHEESE?! that sounds… bizarre?! intriguing?! delicious?!”

…all of the above?!

it’s one of my favourite treats. it is rather expensive and therefore i do not buy it often. however, i had been craving it and so i nabbed an eight dollar chunk from my local market.

i had this ridiculous butter just waiting to be used. i normally serve bread cheese with maple syrup and i swear it tastes like french toast!  i’m telling you – this stuff is insanely delicious!! Continue reading →

{fresh and crumbly parmigiano reggiano – it’s that time again!}

whole foods cracks a brand new fresh wheel of this crumbly gold every year around this time… and i always try to nab some up.

i look forward to it every year. there just isn’t anything like freshly cracked parmigiano reggiano.  did you know in order for it to have that “stamp” or seal that says it’s the real deal, the cows can only graze on certain pastures in certain parts of italy.  and that those cows are the only cows used to milk and create this wonderful cheese with?!

ain’t no fake stuff here! 🙂

{balsamic bellavitano cheese}

sooooo – my stats have suddenly started dropping lately.  i don’t really want to focus on it too much, but i find it odd that out of nowhere, i’m getting less and less “likes” when for a good while there i was getting more and more and people were finding and following my blog… i just find it odd… any insight you all may have is appreciated.

meanwhile, i’m going to keep writing amazing blogs.  i love doing it for me, but i also do this as i hope to inspire others to try new foods and recipes and to create their own!    food is fun.

this blog is about another specialty cheese that i discovered at whole foods market a couple weeks ago called balsamic bellavitano.  it is one of the most delicious cheeses i’ve ever had – and i’ve tried a lot of cheeses!  this is a reserve cheese with a little nuttiness and hints of fruit in the flavour.  i love how they wrap it in special paper…

{fantastic freshly-cracked parmigiano reggiano}

i’m starting a cleanse this week.  i’ll write about it next week so stay tuned! for this week, i thought i’d feature a few things that i super enjoy on a special level. i eat about 80-90% vegan.  i’m not strict about it, but i just try to eat as healthy, local, raw, organic, and seasonal as i possibly can…

but, every now and again, i just love to indulge.

i eat really really good food pretty much all the time, and i am grateful for that.  once in a while there are those things i just really look forward to… a fresh-cracked wedge of official parmigiano reggiano is one of those things for me.  i’m not talking the parm you sprinkle on your pizza from the bottle or tub, i’m talking this thing has only been in contact with open air for less than 24 hours.  i’m talking about a piece of cheese that is so unbelievably FRESH, flavours linger from it that absolutely blow your mind.

so – it’s fathers day and all and my dad lives in a different state, so i will not be able to celebrate with him — but i will still celebrate him and life in general!  i did get to have dinner with my kickin’ grandpa though, and that was lovely.
