i made this dish weeks ago, and have had this blog in queue for a while now… i had quite a collection of blogs to keep me updating regularly, but i haven’t been cooking much this week and so my recipe backups are all gone now yikes! — see, i had a rather busy week, and another one ahead. i’m using up what’s in my kitchen to rid my fridge because i leave for a trip to NEW YORK CITY this week!

but today – today will be spent in front of my computer with WORDPRESS CLOSED so i can focus — i’ll be editing a wedding i had the privilege of fotographing this past weekend amidst the fall foliage and log-cabin backdrop. it was gorgeous and i can’t wait to share some of the fotos!
in the meantime, here is a simple recipe for a simple side dish…
usually when i make polenta, i just search for random stuff to put on top of it. and i always buy organic — because polenta is corn, and you know how i feel about GMO…
– delicious organic cherry tomatoes
– leftover baby spinach
– a few cloves of garlic
– some tomato paste
– and a sweet onion – cuz i love ’em…
begin by chopping the onion {you’ll only need half} and sauteing it on medium heat with a couple spins of EVOO in the pan…
i don’t really caramalize them for this dish, i just wilt the onion down and then toss in some chopped tomatoes – about 2 cups…? i threw some early girl tomatoes in there as well – they are so delicious! of course i leave the skins on everything – it’s where the most nutrients live!
meanwhile, open your polenta {i buy the prepared “soft” kind} and warm it up in a separate pan with a smidgen of veggie stock. once it breaks up, add in a little more stock and some cheese of your choice. i think i used up some sharp cheddar i had because i love it…
check on your other pan – squish your cherry tomatoes to release their juices {racheal ray taught me this!}
squeeze in some tomato paste to taste {nice.} i also threw in some spinach at the last minute and wilted it down…
let the sauce simmer for a minute or two… and once the polenta is creamy to your liking, turn off the heat and grab a bowl…
top with cheese and serve it with a yummy crusty baguette…
and have seconds 🙂

Just my mum’s. And I usually do something similar with a tomato sauce. That’s the only way I’ve had it!
