{meatless mondays – pretty rainbow chard}

prior to sauteing up a healthy batch of beautiful rainbow chard {i make mine with a little EVOO and diced shallots},  i like to sit back and admire the colours and patterns this wonderful vegetable creates…

i love the texture of chard.  it’s almost got this “bounce” to the leaves… they seem almost bubbly to the touch, i just love that.

the colours on this one were so vibrant!  and i just love how it looks like veins… because these types of foods are good for our veins, our blood, our circulatory system, our heart, our brains, our EVERYTHING!  greens rule, eat lots of them!

such a colourful dish.  i make a big batch and eat it throughout the week…

    They do say the colours of the food determines how healthy it is. These are gorgeous.
