i like making stuff myself.
salsa and guac are always so easy, super healthy, and a hit for any occasion. i sometimes just like to have it sitting out while i’m preparing dinner or of course, during any football game. i’m so happy it’s preseason! the broncos are playing super late tonight, so i look forward to catching the game!!!
– 4-5 medium-sized tomatoes, chopped
– 2 avocados, chopped
– 2 small onions, chopped
– 1 jalapeno, diced
– 4-5 cloves garlic, shaved or grated
– cilantro leaves, rinsed
– 1 lime, halved
i make two different dips.
for the salsa, begin with amazing organic local tomatoes :
save about 1/4 cup tomatoes for the guac – then add in onion, garlic, jalapeno, cilantro, juice of 1/2 lime, sprinkle of S&P {i don’t measure, so you’ll have to trust your instincts with this}… blend in a food processor to your desired consistency. i like mine to be all blended well, not a lot of chunks…
for the guacamole, start with an amazing organic avocado like this :
i take a lot of pride in picking a good avocado…
i think i actually used 2 avocados for this – then add in reserved tomatoes, jalapeno, onion, garlic, juice of 1/2 lime, S&P, and blend well until very creamy… i tend to add less garlic or onion to the guac, as to not overpower the avocado flavour.
let sit for a few minutes to let the juices settle… add in more of anything you feel needed, to taste…
serve with organic tortilla chips and of course, something refreshing to drink…
i boiled down fresh ginger in water and created this syrup…
then added it to my homemade seltzer water…
and, i added in a little brandy… because i love me a brandy and ginger ale, especially with anything spicy!
🙂
Brandy and ginger ale sounds heavenly!
Avocados are one of my favorite foods, but Husbandio doesn’t like them (one of the few things he doesn’t eat…along with pineapple…weirdo) so I rarely stock them unless I’m craving a delicious treat. YUM YUM YUM!!!
