i don’t even know what to say about this adorable vegetable. when my new boss {i left the corporate world last week – details to follow!} told me that this looked like a watermelon inside, the first thought in my head was, “well, that would fotograph just perfectly with black lava salt!” 😀

now, i am not the biggest radish fan on this earth, but i do occasionally get cravings for them. i roasted some once, which totally changes their flavour – almost making the “bite” more tolerable.  radishes are high in vitamin c and potassium, and they are a very low-calorie food.

and sure enough, are a bright magenta colour inside!

so i obviously had to cut them into little watermelon-shaped slices…

sprinkle on some wonderful black lava salt.. for taste, and for effect! 😉

    Radishes, thinly sliced, tossed with orange slices, salt, and a little olive oil, make for a refreshing salad, and the oranges mitigate the radishes’ bite. Probably look great with these lovely watermelon radishes & black salt! xoxoM

      thanks for the suggestion, sounds yummy!! radishes sliced thin are kind of the only option, in my opinion. i just kept these slices thicker for aesthetics 😉

    I am in love with their color!!! So vibrant!! I have to say I’ve never heard of watermelon radishes..any idea where to look for them?

      i agree! i picked these up at a local organic food market where i live. any specialty produce section should have them – the big corporations like whole foods would probably carry them seasonally.

      thanks lady. i saw some watermelon radishes at vitamin cottage earlier in the summer… you may still see them for another couple weeks or so…
