{homemade kimchi}

this is becoming my new favourite thing to make! it’s so simple and easy and healthy. full of gut-healing probiotics and so much flavour!

it starts with simple, colourful, beautiful ingredients. sometimes i throw in cucumbers too…

and i found this sauce at a local market and it makes the process so much easier since the “paste” is already made for ya! you can purchase the powder too, but i find this way to be the most efficient.

simply chop up all the ingredients like carrots, green onion, radish, asian pear… all of which are full of nutrients like vitamins A, C, K, as well as fiber and they are hydrating too!

and i save the cabbage for last. mostly because i am obsessed with cabbage (IYKYK)…

cut the cabbage in half and then in quarters. slice long ways to include a bit of the crunchy part as well as the leaf… then and add a bit of salt… let it sit for about an hour to draw out moisture. rinse, and add to vegetable mixture…

mix in some of the spices and gently fold together… this will create a natural brine.

pack tightly into an air tight container and ensure all veggies are submersed under the liquid. put in a cool dry place for up to a week, ensuring to “burp” the jar once a day and watch the active bubbles flow!

store in fridge and enjoy daily! great on its own or with rice or in ramen, soups, salads, and stir fry!

i heart comments.
