i mean, these are just gorgeous… right?!
i’ve always wanted to make something with squash blossoms, but due to the fact that they are hard to find and have a small window of availability, i often miss my opportunity…
…but not this time 🙂
goat cheese stuffed squash blossoms… stunning and scrumptious.
i could’ve had full-on foto shoot with them, but i got hungry… so this will have to suffice…
…for now 😉
here’s the recipe i came up with :
– squash blossoms {5 freshies}
– goat cheese {about 6 ounces}
– frozen or fresh corn {about 1/2 cup}
– fresh red pepper {about 1/2 cup}
– chives {handful, chopped}
– 1 egg {i get to use farm-fresh eggs – so blessed!}
– bread crumbs
saute corn/red pepper with butter and/or EVOO until just tender….
{fresh chives from my friend’s garden…}
add to softened goat cheese…
toss on cooked roasted corn/pepper mix…
mix together well… sneak a taste…
carefully stuff squash blossoms with goat cheese spread… i found it was easier to kind of “roll” them up, almost like an enchilada.
whisked egg w/ S&P in one bowl, bread crumbs in another…
carefully dip stuffed blossoms into egg then into bread crumbs… i sort of spooned my egg onto them… i was mostly being meticulous about it because i’m a foodographer… a stubborn artist 😉 but if it gets a little messy, whatever!
have a hot pan with oil heating on medium to high heat ready to go…
fry until batter is crisp and golden brown…
i should’ve used a higher-heat oil like canola but instead i used olive oil. it was still delicious!! it just didn’t get as crisp on the outside as i wanted… just a little tip if you’re going to try this 🙂

Heavenly! I’ve only ever seen squash blossoms on the Food Network before and never actually had a recipe to go along with them. They were fried and didn’t look NEAR this appealing!
