oh my goodness was this a lovely meal. the whole day was lovely yesterday : there was such amazing energy in the air! that supermoon energy was flowing all around me and through me, it was awesome!!!! did any of you get a chance to see the super moon? it was too cloudy here, so i will have to camp out next year 🙂 but i definitely still felt the energy this weekend!!!!
i took a little trip to a farmers market a little north of me in search of some kirby cucumbers to make pickles with. no luck in that department, unfortunately… however i did discover some amazing things while there! and with most of the ingredients i purchased yesterday, i made this incredible pasta dish!

most everything in this dish was purchased fresh from the market yesterday…
– garlic chive pasta from pappardelle’s {amazing!! family-owned company and they have over 100 kinds of pasta!}
– organic heirloom tomatoes
– garlic scapes
– volcanic garlic {i can’t wait to blog about this!}
– fresh chives from my friend’s yard
– basil dressing, cream cheese, tomato paste, and a little parmesan {not from the market, but perfect to have in the fridge for this dish :))
i bought the garlic first… which is what inspired this particular kind of pasta… but i spotted a fruit pasta, pumpkin pasta, and spinach pasta, as well… among dozens of other varieties.
there was just enough left of the garlic chive for me… perfect! pasta cost me about $5.
i didn’t have any pasta sauce in the house and i didn’t want to make another stop to buy some… so i made my own…
to begin, i chopped the garlic scapes and fresh garlic, about a half a cup in total…
sauteed them in a little ghee…
then chop tomatoes and threw them in…
let the tomatoes cook a little then added in some tomato paste and a little water…
simmered on low until the sauce thickens, then added in a little cream cheese, about 1/4 cup of dressing {i chose a local organic basil dressing i had in the fridge}, and a smidge more tomato paste if needed…
sprinkled in a little parmesan, tossed in some fresh chopped chives and when ready, poured all over the cooked pasta…
{tip – reserve a little starchy cooking water from your pasta and throw that in your sauce at the last minute. this helps the sauce and pasta come together}
absolutely delicious!

once the pasta sauce settled a little bit, it looked like this. i’m totally taking some to work for lunch today 🙂
all in all i spent about 10 bucks and got this amazing dish which made at least 2 servings… gotta love that!

YUM! Thanks for sharing Audrey! What a lovely and simple idea. I’m not a big pasta eater but kinda wish I was, so I’m always on the lookout for exciting ways to eat it! This totally fits the bill. 🙂 Can’t wait to try it!

i’m not really big on pasta, either. i like gluten free pasta better than regular pasta haha. but i couldn’t pass up FRESHLY MADE pasta from the market, i just felt so european and i had to run with it 😉 if i just had my basket-adorned bicycle with me and a summer hat, the accent would’ve come naturally hehe 😉 i do like making my own sauce when i make pasta, though… totally different experience in my opinion.
