{meatless monday} — an easy make-ahead meal : rainbow rice

greetings, you faithful readers, you.  and thanks for reading 🙂

here’s a great make-ahead meal that keeps well in the fridge – one you can take to lunch during the week or add to your plate at dinner time. nutritious, colourful, and budget-friendly – that’s quite a trifecta!

rainbow rice – because it’s so colourful 🙂

– about a cup wild rice, rinsed

– 3 small zucchini, chopped

– 3 small bell peppers, chopped

add 3 cups water, a pinch of salt, and rice to a saucepan and bring to a boil… turn down heat to medium-high and simmer, stirring frequently… about 30 minutes.

meanwhile, in a large skillet, toss in your zucchini and peppers with a few spins of EVOO and some S&P.  i threw in some green onion i had laying around, too… saute on medium heat until tender…

once your rice is fully cooked, toss it in with the veggies and mix together…

serve immediately and/or wait to cool and throw it in the fridge for lunch the next day, and the next day…

add in some black beans for increased nutrition!
