i’m fascinated with the texture!
the colour throughout reminds me of veins… and greens are good for your blood, so how cool is that!
i like to steam-saute mine with freshly chopped garlic and/or sweet onion…
sprinkle a little S&P in at the end…
and shovel it in my face!

Delightful with a little red wine vinegar at the end or sweet onions and citrus. What a powerhouse too!
