good morning, happy monday, hope you all had a nice weekend.
i was delightfully lazy yesterday, glued to the couch and the olympics most of the day. i completely heart sundays for that reason. if i want to go somewhere, i can – but mostly it’s just my day to rest… and eat. 🙂
this dish was created because i always keep falafel in the house – it’s one of my protein staples, and i love love love it! i also had another bunch of the purple carrots – and i know they compliment sweet potatoes well. i had almond milk in the fridge, and i keep the spice on hand because i love curry spice! i didn’t have any tomatoes around, so i used tomato paste for a little extra flavour :
– one bun pita bread {good price, good product!}
– purple carrots
– 1 small sweet potato
– 8 falafel balls
– almond milk
– tomato paste
– indian curry spice
chop up your sweet potatoes and carrots – then marvel at them…
i leave the skin on, more nutrients in the skin…
check out the rainbow inside – white, yellow, orange, pink, purple… so cool.
add your carrots and sweet potatoes to a food processor and finely chop…
add this mixture to a saute pan with 1/2 cup water and your choice of butter…
simmer until the carrots begin to soften, adding more water if necessary, then sprinkle in some curry powder to your taste – remember to start with a little, you can always add more…
stir in some almond milk and a little tomato paste – simmer on low-medium heat until liquid is absorbed and veggies soften…
meanwhile, chop up your falafel balls like so…
once your sauce begins to thicken, toss in some fresh english peas if you have them laying around like i did – add a little sweetness to this dish.
then i took my pitas, toasted them, and smeared with a little organic almond butter to combat the spiciness of the curry. nut butters are good for toning spice, did you know that?! my uncle puts a little PB in his chili, it’s a secret ingredient – and we always serve it with peanut butter and crackers.
smother your almond butter covered pitas with your sauce mixture and pile on the falafel…
i love this dish, and it works well on a cool night, like we have been having lately here in colorado —

This made me soooooooo hungry. Husbandio made me PB&J sandwiches for lunch today which was very sweet of him, but I want FALAFEL!
