italian qrunch patty smothered in homemade tomato sauce

19 Jun

as i’ve mentioned before, i love love love my Qrunch burgers. i was thrilled to discover this week that they are locally made here in colorado!  hooray!  the owners were super kind enough to even feature my last qrunch blog on their facebook page!

i was thrilled to discover a new flavour had come out! the italian version is similar to the original but with a little extra kick and spice and goes so well with this dish i created!!  🙂  ever since i discovered these san marzano tomatoes from circle fresh farms here in colorado, i’ve been making my own spaghetti sauce from scratch each time. i just love the flavour sooooo much and i swear i spend 20 bucks a week on these damn juicy delicious tomatoes!! expensive little habit but so worth it, for me… i have good taste, what can i say… 😉

i have been meaning to bug the farm rep about buying a plant! ….. i should get on that.

ingredients :

– italian style qrunch burger

– tomatoes of choice

– greens {i did a mix of watercress and super greens}

– parmesan

– garlic {scapes if you can – see below}

kind of reminds me of sideshow bob’s hair – no?!

chop your garlic scapes and saute on medium heat in a little olive oil or butter.

meanwhile, heat up your qrunch patties — i like mine a little crisp.  make sure you flip to get each side.

chop and toss your tomatoes in with your garlic – squish them up to get the juices flowing and forming your sauce.  once it has reached your desired consistency, let’s put it all on a plate.

i put my qrunch burger patty on a bed of supergreens and watercress and smothered it in the tomato sauce.  then topped it with tons of freshly grated parmesan.

this is one healthy dish, too!  the tomatoes and garlic provide antioxidants and anti-inflammatory properties, the greens give you tons of nutrients and fiber, and the qrunch burger is a superfood which helps you to absorb all the other goodness – plus, it’s chalk-full of protein!

    Thanks for sharing this! I had given up on frozen veggie burgers because of objectionable ingredients – but so nice to be able to have something in the freezer for an emergency! I’ll check them out.

      i agree – and they usually taste icky. Qrunch burgers are awesome and healthy! i’m not sure where you can find them other than whole foods market. they are a local colorado company but i’m not sure how far they’ve reached out yet… do keep your eyes peeled for them! so great! in fact, the ingredients are so basic, you could almost make your own 😉
