i seriously love having a food processor. it has changed my life. i don’t necessarily mind chopping, it’s actually kind of relaxing to me… cooking in general is, really. but for making fun dishes like potato latkes, having a food processor makes things so much easier – and more fun.
i got the idea to make potato pancakes because
1. i’ve never had them and 2. i have a food processor now
plus, potatoes are a good veggie option for me and are hearty and can be done so many ways. this is one way i had never tried. i also made my own applesauce to accompany it – holy yumness!
i began with basic ingredients :
{my latkes turned out a little larger than planned, so i’m cutting back the ingredients here}
– 4-5 medium-sized russet potatoes
– 1 small yellow onion
– 3 pasture-raised local eggs
– 2 organic apples of choice {i went with cameo}
scrub potatoes really well and slice into quarters. in a food processor, shred all potatoes and then put into a colander. {rinse out food processor well – we are going to use it later}
we want to drain out as much water as possible from the potatoes so they crisp up nice when we fry them. place a towel on top and SQUISH out all the water… then – we can also try this trick i found online :
place potato shreds onto a piece of cheesecloth {clean dish towel will work as well} and wrap. then twist and ring out any excess water… this seemed to really help me!
next, place potatoes in a large bowl and crack in your eggs and add a little S&P then mix together well. in a large skillet, heat about 2 tablespoons of oil on medium heat. you want the oil to cover the bottom of the pan by about a half inch…
form mixture into balls *about* the size of a tennis ball- a little smaller. mine were more like baseball size and were too big…
press the latkes with a spatula to flatten them out a bit. cook on medium heat until each side is crispy. add more oil if necessary.
once they are close to being done, we can make our applesauce super quick.
chop up your apples into quarters and blend in the food processor until your desired consistency. i didn’t add anything to mine, just apples. and YUM!
latkes are typically served with sour cream on top. when i realized i didn’t have any, i thought i’d substitute with some yummy greek yogurt.
this local stuff is DA BOMB! haha
served mine with the quintessential green salad on the side.
and quite tasty, i must say. the yogurt made the potato pancakes extra awesome 😉
