vegan chocolate mousse

happy memorial day weekend!

what better way to celebrate than with treats?!  i’ll be cooking tonight for sure — nothing major, just some corn on the cob and maybe some mashed potatoes, watermelon, and a Qrunch burger.  not necessarily in that order.

this dessert is so super easy — a friend of mine introduced me to it and now i make it all the time when i want just a little something sweet…

– coconut milk {one can per person}

– agave nectar

– cocoa powder

allow the coconut milk to sit in the fridge overnight, if you can…

open the can of coconut milk and scoop out the solid portion from the top into a bowl – leave the remaining water aside for a smoothie, drink it, or freeze it.

mix in cocoa powder and agave to taste… it’s really up to you.

whisk together until blended well and whipped such as a mousse.

serve immediately – it’s also really good with fruit!

i’m not a food stylist, unfortunately – and i don’t have one of those cool little things to squish it out and make it look neat – but trust me, it still tastes amazing!

    Beautiful, Audrey! When I read ‘vegan,’ I ws expecting tofu or avocado or some other more complicated procedure, but this is so simple and elegant. Thanks for sharing!

    this is very different and two of my girls can’t have milk so they would love this!

      thank you so much. it is very good, and i should make it more often than i do. i wish i had a nice kitchenaid or some kind of nice blender that whipped things like this… it’s one thing i’m lacking in my kitchen.
