{thirsty thursday – homemade pickles and octoberfest for days!}

i have always been a HUGE fan of pickles. they are easily one of my favourite snacks. once i started making my own, i was hooked!  i have even been known to travel across the country with them… no joke.

as usual, i KISS with these.  simple ingredients :

super easy refrigerator dill pickles :

  • 5-6 cups cucumbers, chopped
  • 1 cup distilled white vinegar
  • 1 tablespoon sea salt
  • 1 head fresh dill
  • 2-3 cloves garlic {optional}

chop the ‘cuces anyway you would wish… i like to do little medallions, or “chips” – perfect for snacking 😉

directions :

in a saucepan, bring water, vinegar, and salt to a boil. allow to cool and pour brine over cucumbers, dill, and garlic {or any other spices you wish to add.} cover immediately with airtight lid and put in refrigerator for a least 5 days.

all that’s left to do is eat and enjoy!

i strained out my dill afterward and repackaged the pickles in the brine for easy munching… i could eat this jar in one sitting.  I LOVE PICKLES!!!!!!

and I LOVE OCTOBERFEST!!!

this is pretty much the only beer i drink during the month of october. i just get my fill for the whole year – ha! 😉

but lately i’ve been buying it in cans – since they fit in my “mini fridge” so perfectly… and i don’t drink soda, so i HAD to fill this spot with something… 😉


hope you enjoyed my recipe! i make fridge pickles all the time and i just love them! so easy and delicious and you control the ingredients! they’ll keep well in the fridge for 4-6 weeks. mine don’t usually last long, though!

    I have wanted to make homemade pickles for so long! One of those things were I’m really unsure as to what I have been waiting for!

    So beautiful! I just came home from work and filtered my fermented pickles and jarred them back up. Soooo much tastier than store bought! A lot of posts made it seem hard, but mine turned out perfect. Beginners luck I guess. Great post and great pics!
