{happy (belated) asparagus season!}

i’ve been getting my fill of delicious organic asparagus!

it is a marvelous food to eat in spring because it is very cleansing to the body and blood. asparagus is also in season during the spring, which just further proves how awesome and intelligent nature is! 🙂

i like to enjoy asparagus raw or lightly sautéed in grass-fed butter with a dash of himalayan pink salt and black pepper. sometimes i like to add it to risotto with wild mushrooms. when i lived in the mountains years ago, i had a lot of fun foraging for asparagus because it grows wild on the western slope of colorado. pretty cool, huh?!

a tip for keeping asparagus : treat it like fresh-cut flowers. keep the ends trimmed and leave them in a little water in the fridge until ready to use.

i love asparagus so much and i only eat it when it’s in season.

did you know that asparagus is loaded with fiber and actually aids in cleansing our gut and also offers awesome detoxifying benefits? i think that’s so cool, considering it is in season in spring and that is a perfect time to prep our bodies for cleansing and switching gears to lighter foods. furthermore, asparagus is a natural diuretic… which may be TMI, but hey, it’s just a fact.


on a different note – i’m so ready for the time change and gaining more evening light! i am so super excited to start a garden this year!!

{eating seasonally : the awesome artichoke}

as many of you probably know, i prefer to eat seasonally… it gives me things to look forward to, and it’s also good for the body. now that we are in the prime of summer, i am switching up my diet to include things that are currently in season. which is exciting because my garden is poppin’ right now and i’ll soon have more seasonal produce to enjoy {and share!}

the flip side of eating seasonal is letting go of some of the foods that stop producing as the months progress. for example – peas, arugula, radishes, asparagus, and in the case of this blog – artichokes.

i just love love love artichokes and i do miss them when they are not in season… but i also do get my fill of them during the spring and early summer months. i like to serve them with an aioli or melted butter… nom nom!

aren’t they just so interesting looking? i love vegetable guts, and i have always been fascinated by the insides of certain veggies like artichokes, cabbage, lettuce, etc.

{first cleanse of 2022}

happy new year, y’all!

it’s a numerology 6 year, and i feel good about that. i like things in triples and/or threes. 😀 also, the number 6 represents love, unity, creativity, health, consciousness, empathy, and completion. and we totally need more of all of those things in our world, don’t we?!

how’s the weather been where you are? here in the northeast, it’s been up and down and back and forth. we had some 60-degree days in december, and then we just recently had our first snowfall shortly after the holiday. admittedly, snow is still not my favourite, but i’m cool with the “hibernation mode” that winter offers.

at least once or sometimes twice a year, i try to do a little “cleanse” – as in intermittent fasting and eating predominately raw or steamed veggies and fruits, along with plenty of liquids, lots of yummy homemade soups and broths, little-to-no sweets, and zero caffeine or alcohol. i started doing this in 2012, and you can read all about my first experience here.

i have been saying to myself for months that i wanted to do a cleanse, but i simply wasn’t feeling motivated. around the holidays, people are always giving out cookies and candy and drinks and snacks and all the things. perhaps it’s a comfort thing, but it’s hard to deny myself much of anything during the holidays. although at one point {in 2012} i cleansed for like 27 days right in the middle of christmas. i honestly have no idea how i persevered through that – haha! anyway, i knew from experience that a big part of sticking with a cleanse is totally mental. i knew i had to have the right mindset, and i knew at some point i would get there, so i didn’t pressure myself too much. i just kept sort of waiting for the right moment when i just knew i was ready.

that moment arrived in unison with the new year, and i suddenly felt super inspired and motivated… and above all, ready to do it! honouring the new year and new beginnings, etc. seemed like a good collaboration and it just feels appropriate and synchronistic for me.

i usually try to cleanse for about 6 days. sometimes more, sometimes less… again, i try not to put a lot of pressure or stress into it because that will basically negate any other positive benefits. i tend to feel better overall and my head is clearer, etc. my skin looks better, my body trims down, and i tend to have a lot more energy in general when detoxing. one thing that was different for me this time around is that i didn’t have to give up coffee {mostly because i don’t drink it regularly anymore}, and so there has been less of a “detox” feeling {fatigue, headaches, etc.} that i have experienced in the past when doing this type of cleanse.

so, here is a little glimpse into what I’ve been experiencing this week.

{thirsty thursday – beer journal #1}

i enjoy eating and drinking seasonally…

for example, you’ll hardly catch me eating asparagus in the fall or winter. and on the same side of that coin, you’ll hardly catch me drinking a porter in the spring or summer. i like having foods and beverages to look forward each season. it feels fun and better overall for me and my lifestyle to eat and drink foods that are in season, and drink beverages that blend well with each season.

in the summer – i prefer to drink ales, lagers, and IPAs.

here are some recent beers i’ve tried that go well with the season.

a classic all-time fav

a clean northwest style lager

i’m a fan of this one because i love galaxy hops

love this bright pale ale with hints of ginger

citric pale ale with hints of kaffir lime

easy drinking golden ale perfect for summer

another fav of mine though i tend to drink it more in spring

{meatless monday : a flavourful riced cauliflower dish}

i made this delicious riced cauliflower one-pot make-ahead meal for lunch last week and it was so yummy, i just had to share the recipe! i love experimenting with random things in the fridge!

i’ve been really into using riced cauliflower as a replacement for grains and it does a wonderful job as an understudy. 😉

riced cauliflower has a great texture and maintains it well during the cooking process. i’ve purchased it both fresh and frozen and they both seem to hold up just fine.

i made this dish as i was trying to use up some leftover ingredients such as frozen asparagus from another recipe. i also had some frozen jalapeños that i grew last year and wanted to use.


so this is what i came up with {amounts are “ish”} :

  • 16 oz. fresh riced cauliflower
  • 1/2 cup black beans
  • 1/2 cup sweet corn
  • 1/2 cup diced asparagus {mine was frozen}
  • 1 medium size jalapeño, diced {ribs and seeds removed}
  • 2 tbsp hot sauce
  • 1 tbsp cumin
  • salt & pepper to taste

heat some butter or oil of choice on medium heat and toss in riced cauiflower. cook slowly until al dente. add in asparagus and jalapeño, cook until slightly tender then throw in black beans and corn and cook for another minute or so. sprinkle in hot sauce and spices and toss together. keeps well in the fridge for a few days. can be frozen for future consumption.

organic chicken or grass-fed ground beef makes a nice addition to this recipe. i made this one vegan because i like to eat vegan at least once a week… not for any particular reason other than keeping things in balance 😉


and i just-so-happen to love cumin! it’s one of my favourite spices… do you like cumin?

 

 

{light & simple fusilli pasta salad with roasted chicken and fresh veggies}

i love to make this dish… and quite often, too! it’s simple, healthy, colourful, and great as a make-ahead meal to have on-hand for lunches. furthermore, it is an easy to dish to batch-cook… a great choice to take to potlucks or BBQs. it has a lot of fun “crunch” and texture, which we all know i love and enjoy, and as always, you can control the ingredients. i simply buy a roasted chicken from the market whenever they are on sale… then i eat some, shred the rest, and save it for a dish like this or to throw on salads.

i always try to eat something raw with every meal i have – whether it’s a large salad with some warm soup and bread, a ripe banana in my oatmeal, or fresh avocado slices on top of my scrambled eggs – i always try to incorporate raw ingredients. i believe it’s important to balance out a dish with raw components that only fresh vegetables or fruits can offer. what i also love about this dish, is that it can be served hot or cold – it’s great both ways! i love it when my food is versatile 😉

and you can add in whatever veggies you want, really. mix it up with cooked and raw veggies… i would like to try this dish with some fresh spring peas, roasted garlic, and blanched asparagus – to celebrate the season!

fusilli with roasted chicken and fresh veggies:

– 16 oz cooked fusilli pasta, drained and set aside {reserve 1/4 cup starchy water}

– shredded roasted chicken {about 1 cup}

– veggies {about a quarter cup for each} :

   ~black olives

   ~cucumbers

   ~red onion

   ~mushrooms

   ~tomatoes

   ~corn

   ~purple cabbage

combine all ingredients and mix together. drizzle in reserved starchy water {this will help “marry” the pasta to the veggies}. add in dressing of choice {i opted for a french vinaigrette} and some S&P to taste. sprinkle in some dried herbs, if you wish…

hey gang – hope all is well. i don’t know about you, but i am so beyond ready for spring. warmer days, open windows, sandals, tulips, etc… aren’t you?! i know i have readers from all over the world… and i often find myself wondering, “what is the weather like where YOU are?!” 😉

…does anyone else feel all wonky for like a good week or so after the time-change happens?! it doesn’t matter if it’s in the spring or fall, my being just tends to feel it one way or another. however, i so welcome the extra light with open arms!

i miss my mama.  today and all week. i’ve missed her since april 14th of the year 1993.  this time of year is hard for me – i won’t sugar coat that. sometimes randomly, i’ll think of something that reminds me of her and it will be hard. it never gets easier. however, i find comfort when i spot a penny on the ground, or when i catch a glimpse of myself in the mirror and do a “double take” because i look so much like her… and i find great comfort in knowing that i am now living in her favourite part of the world.  she was absolutely in love with these rocky mountains – and it’s an honor to live here… for her and for me.

and i also love asparagus!

i usually do my best to eat with the seasons… which means i wouldn’t normally be eating asparagus right now, but hey – i’m the birthday girl, i can do whatever i want, right?! 😉

my birthday {which is tomorrow, actually} is always so close to thanksgiving {it was ON thanksgiving last year and the year i was born}, but i admit i’m happy that it falls in an entirely different week this year!  i haven’t really been thinking of the holidays as much this year since i switched jobs {that’s a whole big, long blogpost or BOOK waiting to happen} so it’s been nice to really focus my energy on ME. i do have to work tomorrow, which is kind of a bummer – but i’m celebrating today and tonight with this amazing food and drink.

i like to spoil myself on my birthday.  i started this morning with my favourite americano from my favourite coffee shop and a sinful pastry they call an “apple jesus” – can’t wait to try that!  and i plan to have peach-wood-smoked salmon for lunch, followed by the above amazing meal for dinner… swallowed down gently with this :

la fin du monde – french, which translates to “the end of the world

it is a triple-fermented golden ale that is high in alcohol content {9% : i tried to finish the whole bottle once – not a good idea for this 110-pound lass} la fin du monde is full of wonderful champagne-like bubbles which deliver hints of honey and fruit, accompanied by floral notes that linger pleasantly and round-out with a smooth, dry finish.

i have one every year on my birthday… and i always cook myself a super nice meal, usually consisting of seafood, since it’s my ultimate fav.  i am already salivating, just thinking about my day full of amazing food…

happy birthday, food and foto!

today is food and foto dot com’s first birthday!  woohoo!  i’m making my favourite snack, amazeballs, in celebration and instead of cake. 🙂

on this day in 2012, i created a wordpress website and turned it into a dot com.  food and foto was created with the idea of educating readers on healthy eating options as well as sharing my passion for fotography.  it has since molded into a collaboration of recipes, ramblings, and images from my canon.  with over 220 posts, i must say this blog has transformed into such a fun and healthy outlet for me to share the things i love most.  i am humbled by the amount of support from the wordpress community, and i am honoured to have as many followers as i do. my dream is to see this blog transform into a lifestyle blog that inspires people to create.  i enjoy cooking and sharing recipes, but i also enjoy sharing information about overall health and wellness… and living a simple life.  and since i’ve become rather good at manifesting, i’ll just throw this out there –

my dream is to make this my FULL TIME JOB!  and it can happen!

and so, now i am brainstorming new ways to tailor this blog into something slightly different.  i like consistency, but i am also a huge proponent for change and i think it’s important to keep things fresh.  so i’m working behind the scenes over the next few days, coming up with new ideas for this ever-growing blog, food and foto dot com.
