{meatless mondays : colourful roasted mushrooms w/ veggie ribbons}

i noticed a few new followers have joined the fun – thank you and welcome!

in case you don’t know this about me, i love to eat anything with colour. i believe in living by the motto… well, a lot of “mottos” really – but one of them is “eat the rainbow.”  if your food has colour naturally, it is good for you!  this dish definitely meshes with that motto.  i whipped it up last week when i was doing a short veggie cleanse.  i just love mushrooms – do you?!

this is a great vegan dish, or a healthy random way to get in a ton of veggies all at once.  sometimes i’ll construct meals entirely of vegetables… this one i just made up on the spot, when inspired by the fresh-looking produce in the market.

simple ingredients : portabella mushrooms, zucchini, purple cabbage, shredded carrots.

i’m fascinated by the intricate insides of certain vegetables – like cabbage.

zucchini just never disappoints.  i like it any way i can get it.

veggie ribbons.

directions :

chop cabbage any way you like. use a veggie peeler to create zucchini ribbons. add with shredded carrots and toss in olive oil and S&P {optional}.  brush oil on topside of mushrooms, then flip and fill with veggies. wrap in foil and bake in a pre-heated 350 degree oven for approximately 20 minutes…

once veggies are tender, remove from heat.

i served mine on a bed of raw spinach.

i got a little foto-obsessed with this dish… mostly because of how pretty and colourful it is!

oh and by the way it was DELICIOUS!  it would’ve been way better with butter and/or different flavourings – but as i said, i chose this as a “cleanse” sort of meal… so there is definitely room for variations, as always!

but goodness – i just love a portabella mushroom.  so filling, so tender, so juicy, so flavourful… do you just LOVE mushrooms like me?!?!!

    Looks very tasty! I can not stress enough how important it is to me that the food looks inviting to my 2 y old, and this does! He is not a fan of meat, but loves vegetables, so thank you for helping me get creative in the kitchen more easily! 🙂

      hi oloriel! thanks for stopping by and for the nice comment! nothing makes me happier than knowing that my food creations inspire people – especially children! i do not have or want any of my own, but i am very passionate about educating young children on food and how it effects our bodies. when i was a kid, i could sit and eat a bowl of squash like it was ice cream. i’m grateful to have had that kind of palate.

        Yes, it is important where I live because we get raised with the saying that “Meat is sacred!”. My nephew of now 14 knew he wanted to be a vegeterian since he was 9 and was chastised for it, banned meals and forced meat. My son is exibiting a similar behaviour and I want to take the better route,of dedicating myself to letting him explore the veggie world and get all his body needs to grow inside of him,with no stress and lots of fun! 😀

        that is very interesting. i do believe meat is sacred, which is why i choose only organic meat and dairy, and am very particular about the welfare of the animal. i also believe a well-balanced diet and in eating everything in moderation. where do you live? it’s so interesting to me how different the world is regarding food… it’s really a “relationship” and one that in my opinion. and food SHOULD be fun! that’s what i try to do here on this blog 😉

        I live in Serbia. The countries eating habits have been weaven by war. Many of my family members had nothing to eat in their childhood, and their generations too, hence why now it is important to lavish in meaty goodies. We have grown a mentality where we are not so keen on the “moderation” part 😀
