soooo – the broncos lost the superbowl. yeah, in like a MAJOR WAY! *sigh*
i’ll leave the rants for the professionals – all i’m going to say is it’s a good thing i was surrounded with fun people and lots of delicious food.
it was a “soup-or-bowl” party – bring a soup or a bowl of salad. i brought maryland crab soup. so i thought i’d share the recipe 🙂
i had never made this before – though i remember eating it almost every day for lunch when i was living in aberdeen, maryland many years ago. my favourite little cafe on the side of the highway always had the biggest vat of it simmering all day and it smelled so amazing!
i just made it based on what i remembered and “winged” the rest…
i made a HUGE batch – maybe too huge. but it’s all good – i froze some and will sip on a bunch for lunch this week!
ingredients :
– chopped tomatoes {can}
– beef stock {fish stock would’ve been my preference but they didn’t have any}
– frozen corn, green beans, lima beans, and peas
– fresh onion, carrots, and garlic
– crab meat – claw and jumbo lump
– old bay seasoning {THE KEY INGREDIENT!}
of course i snagged a huge sample!!!! 😉

i began by sauteing the carrots and a little garlic in some EVOO. then i added in the onions and a little water if necessary. when carrots are soft, add in tomatoes and broth, then simmer for a few minutes. next i added in all the frozen veggies and began sprinkling in some old bay to taste. at the very end i tossed in the crab meat, so for it not to get to mushy. then i just finished off with old bay until it tasted like i remembered…
considering it was my first time making maryland crab soup, i was rather pleased with how it turned out!!!
this is still one of my favourite dishes from back east and will provide me much comfort over the next few snowy days… {and after that severely disappointing loss – *sigh*}

maryland is known for their crabs and crab soup is one amazing way to have it! its really the old bay that makes everything taste incredible. 😀

thanks, hannah! i have to agree. colour makes me happy in general, and it certainly helped with that extremely disappointing game… oh well – as they say, “there’s always next year” {though i must admit i wasn’t preparing to say that with peyton manning behind us…}
