nothing says “spring” quite like fresh eggs.
i feel like the luckiest girl in the world to have eggs “gifted” to me from time to time…
one of my co-workers has chickens… and she shares her eggs with some of us when she has a bounty…
she’s given them to me several times now…
every time the box is different {i love that!} but it’s always decorated with something cute {this one has stickers that read “giving” and “peace”} and are usually kind of seasonal. one time in the fall she gave me a dozen and they were all wrapped up with this cute little red-corn harvest-y looking thing – so cool.
and i love how the eggs look different every time! usually i get at least one “blueish” looking egg… those are cool!
it really feels like something special to get eggs from miss L. i know her hens are fed well, taken care of and loved, and they are happy! so when i eat these eggs, i know they are good for me in so many different ways. the good energy behind each egg only further increases the nutritional benefits.
so i just soft-scramble mine up with a little cheese…
and sprinkle on lots of fresh pepper…
SO DELICIOUS AND SIMPLE! i don’t eat eggs every day, but these are so special that when i do, they are the best-tasting eggs ever! and they really make me think of spring. it’s been a gorgeous weekend here in colorado, i got outside in the garden TWICE! but guess what is expected to make its annoying appearance again on wednesday?! yep, the white stuff… le sigh.

I’m glad you have someone that loves you so much they would give you such an amazing gift! We have friends that have chickens and they are amazing creatures. I can only imagine how nutritious eggs from happy chickens are for the body and spirit.

You are lucky! We use to get a 1/2 dozen gift from friends who “had” chickens and I thought it was the best gift ever! I love those fresh eggs.

i feel truly blessed. it’s such a different experience when i eat these eggs… there is a sense of community, love, the circle of life, nature and a connectedness that takes place that just fulfills me. thanks for reading and commenting! 🙂
