{drink the rainbow! – clementine creamsicle vitamix juice}

this is super delicious, as you can imagine!!

my only issue with this drink right now is that i want one, and yet it’s snowing outside, so it’s just kinda weird… have i mentioned how i’m so beyond ready for spring?!? – even though technically it ought to be here by now…! sigh…

for this creation, i used some clementines i bought in a bag and just pre-peeled some for smoothies and snacking…

– clementines {about 3/4 cup}
– coconut milk {about 3/4 cup}
– ice

blend on high until desired consistency is reached and ENJOY!
coconut milk is wonderfully creamy and makes drinks like this extra delicious and frothy.

    you should write a book (and I ain’t suggesting limiting it to vitamix either – although that’d great), ’bout healthy lifestyle/eating choices/living … you live and breathe it, your honesty and sincerity shine through … always love seeing what you come up with!

      i try to live by the “KISS” rule – keep it seriously simple. 😉

      i use almond milk occasionally. i’ve tried all kinds of milk, but i decided to stick with coconut milk for a few reasons – one, it’s loaded with healthy fats. two – it blends better in a smoothie in my opinion, and the flavour is so mild it just blends with everything… with almond milk i found that my smoothies were more thick than i preferred and the flavour was different. and lastly – i choose coconut milk because of the nutritional benefits… do you realize how good coconut is for our heart, our brain, our skin, and so many othere things??!! if i want to add in almonds for their nutrition, i just add in almonds – that’s one of the amazing things about the vitamix. 😀

    hi there! thanks for the shout-out on my clementine creamsicle smoothie! it was nice to read about your variation on it. i think the coconut milk adds a different kind of creaminess and flavour that cow’s milk doesn’t provide. i don’t really keep milk in my house, but i do enjoy it, i just opt to use coconut milk in my smoothies most of the time… i’ve used almond milk and regular milk, but it’s just a personal preference to use the coconut milk. for this particular recipe, i think the flavour comes from the freshness of the clementines and the creamy fatty goodness in the coconut milk.
