{meatless monday} — “chocolacado pudding”

avocados are an amazing superfood.  packed full of nutrients like potassium, vitamin e, and health fats – avocados also are helpful at maintaining a healthy cholesterol.  they go great with tuna like in my tunacado sammy… i had heard about making chocolate avocado pudding but had never tried it…

until now 🙂

there are lots of variations and i plan to try another soon – but this one is about as simple and delicious as you can get.

so simple.  so delicious.

– avocado

– cocoa powder

– sugar

agave works well as a sweetener, also.  i used a mix of cane sugar and agave.

this is also a great way to use up a slightly more ripe avocado. sometimes they get those dark spots, but it’s silly to waste the whole fruit – since it’s blending with cocoa powder, you’ll never see the discoloration 🙂

remove pit and scrape avocado into a bowl.  add in about 1/4 cup cocoa powder and sweetener to taste – also about a 1/4 cup. you can always add in more, so start with a little and add as you need.  i found i needed a little more sweetener than i guessed, but it was my first time making it and i typically just wing it.

blend together well.  a food processor or mixer would be ideal – it took me way too long to hand mix this!

but it turned out amazing anyway…

chill and serve.  and you may want to make a lot.

    that DOES look good…Is it really dense?? Can you taste the avocado? – I mean can you really taste there is something healthy stuck in there??

      NOT AT ALL!!! google it, there are several recipes, some include vanilla extract. but i’m telling you, this simple recipe is amazing you can’t even tell it’s avocado. maybe in the beginning, as you’re mixing the right combo. but i was shocked at how good it was!!!!! a mixer will help with the lumpiness…

    I’ve made something similar but the recipe was way more complicated, definitely living this simple version!! I used raw honey, very good sweetener as well.

      hi. a lot of the recipes i saw involved a lot more ingredients, but i tried to keep it simple. i admit you have to use a little more of each ingredient to mask the avocado flavour a bit, however perhaps with agave or honey one could use less… i will have to experiment, thanks for the ideas 🙂

    wow, about two months ago I heard this nurse in hawaii telling a friend of hers about something similar to this.. I was kind of eavesdropping..anyways, I had totally forgotten, now I’m excited and reminded, and inspired to try it, thank you 🙂 and thank you for checking out my blog 🙂

      that is a fantastic story! there are several variations to this… some add in vanilla extract or honey in place of sugar… i was just curious what simple cocoa and sugar would do… turned out rather delicious. made it a lot thicker, i will say… let me know if you like it or what you do to prepare it 🙂
