{meatless monday} — “amazeballs” – a new year’s resolution-kinda snack you can enjoy 7-days a week!

a new year is ahead of us. {hooray!} this means a lot of different things to a lot of different people.  for me, it means manifesting only good things derived from light, happiness, peace, honesty, community, harmony, respect, and most of all – LOVE. because that’s just how it has to be… and it will be.

and for a lot of people, new year’s resolutions are a common theme – many of which include things like “living a healthier lifestyle” or “eating better” and the like.  so in the spirit of new beginnings and living a healthier, simpler, easier life – here is a recipe i came up with a couple weeks ago that will blow your taste-buds away.  they’ll want to be calling more buds and be like, “dude, you gotta try this!”

easy. healthy. simple. delicious.

that’s how i roll. just like these “amazeballs” – and they’re sweet and savory – like me 😉

– 1 pound pitted organic dates

– 1 heaping tablespoon fresh-ground almond butter

– 1 hefty squeeze of local honey

– crushed pistachios

shell your pistachios.  or buy them shelled and save some time.. set them aside for later…

in a food processor, toss in dates, almond butter, and honey…

pulse for a moment to break up ingredients, then turn on and grind together until well-blended.

i used the back of a soup-spoon to smash the pistachios into a crumbled pile of deliciousness…

then, roll mixture into quarter-sized balls and cover in aforementioned green-goodness… {don’t you like how i always get the colour in there ;)}

put your pistachio-date-ball creations on a plate and leave them in the fridge overnight or longer. i recommend keeping them uncovered, as it keeps the pistachios crunchier. they are way better served chilled, in my opinion. though, you could certainly leave them at room temp…i just feel like the texture of the dates when chilled far surpasses…

people are going to gobble these up!  i brought them to work for the holidays, and my boss ate like 9 of them in about 3 minutes… hA!

packed with magnesium and potassium {from dates}, heart-healthy good fats {from pistachios}, b-vitamins and amino acids {from honey}, protein and calcium {from almond butter}, and a myriad of other healthy vitamins and minerals – this is a snack for all ages, and it’s easy and fun to make and keeps great in the fridge!  ideal for active lifestyles, too – healthy carbohydrates to replenish you and fuel you for more.

it’s a time for change – and i don’t mean penny-style change.  i mean like three quarters, two dimes, and a nickel, plus a huge wave of tremendous love kind-of-change.  and an extra penny for good luck. 🙂

and it won’t hurt to be eating healthy, nutrient-dense, easy-to-make, delicious snacks to help you feel even more vibrant and promote your overall well-being.  and these “amazeballs” are sure to hit all those marks.

and they are seriously… well, amazeballs.
