{meatless monday} — creamy mashed “yamtatoes”

who says you can only have ONE kind of mashed potato at once?!  well, maybe nobody said that, but i’m breaking that rule anyway.  sometimes my mashed potatoes just aren’t sweet enough, i need something else in them. well wait a minute… this other potato over here is even named “sweet” – why can’t i mix the two together?!  well, you CAN audrey, you so can.

plus you know me, i love my dishes to have lots of colour!

just scrub the spuds real good. i leave the skins on, that’s where all the nutrients live!

chop ’em up…

boil them {together} on high until super tender… then remove from heat, drain potatoes and put back into pan…

grab a tool like this if you have one…

and as a reader of the blog and friend once said “the best way to make a starchy potato is of course, to add in tons and tons of FAT!”  so, that’s what we’ll do.  add in whole milk and butter to taste.  sprinkle in some S&P.  i’m sorry i don’t have exact measurements, it’s just not how i roll.  i always start with a little and add as i go… you can do the same! 🙂

mash ’em all up into your desired consistency…

and serve immediately.  or, do as i did – make a huge batch and take them to work for lunch throughout the week!

i don’t know if i’ll ever make plain ol’ mashed potatoes again.  the yams made such a difference in the flavour!  not overpowering though, just enough of a sweet factor to celebrate this time of year!  now obviously i’ll make regular mashed potatoes again… but this will definitely be a new favourite and one i’ll make frequently for sure!  the key is to use a really good quality butter {preferably organic}.

you’ll REALLY enjoy this one! i sure did.

    You SO can!!! I’ve mixed the sweet potato into my summer potato salads too. Yummy and colorful.
