HAPPY LABOR DAY! hope you are enjoying the weekend – getting some late sunshine, firing up the grill one last time, taking a final dip in the pool, and of course, eating and drinking!
i thought i’d share a fun recipe in honor of the holiday weekend.
these were super fun and easy to make. i made some in the past, but wanted to try a little different approach this time – mostly, more colour. i love zucchini anyway, but the inspiration for this dish was to use up some of the cream cheese i had in the fridge as well as a few of the tomatoes i had lying around – never want those to go to waste!!! when i spotted the multicolour ones at work, i had to snag them up. it’s too bad there aren’t too many “blue” foods, or i would’ve made a slightly more festive version 🙂
– 4 medium zucchini
– about 2 dozen cherry tomatoes
– 1/2 sweet onion
– cream cheese
begin by heating the oven to 400 degrees…
cut off the ends of the zucchini and then slice them in half.
use a basting brush and smear on some olive oil to the backside of the zucchini strips. i brushed both sides for mine, and i admit it made it quite difficult to later spread on my cheese – so maybe don’t do that 🙂
chop up your sweet onion like so…
slice your tomatoes in half like so…
then smear on your cream cheese, and add your toppings…
of course, i wanted mine to be as colourful as possible so i went for a rainbow look. i wedged a couple sweet onion slices in between each tomato… and of course, sprinkle on some S&P…
once ready, pop them in the oven for about 30 minutes until the zucchini is tender… i checked on mine a few times, nervously looking for any tomatoes left behind… surprisingly, they all remained intact.
and turned out oh-so-pretty…
and oh-so-delicious!!!!
these are great hors d’oeuvres for a party, as an afterschool kids snack, or even the main dinner dish – serve alongside a hearty grain like quinoa or some cous cous.
whatever you do with them, know that they’ll be GONE quickly!
