i can’t take the credit for originality on this, however – i’m a huge rachael ray fan… and she had this on her show a few weeks ago and i was uber excited to have company over so i could test it out. i think i pretty much insisted my brother come by for a visit, mostly to force him to drink my concoction 🙂

start with a good-sized, more oval-shaped watermelon, about a dozen key-limes {or half dozen regular limes}, and some fresh mint. you’ll also need some rum… yum!
the best way to pick a watermelon is to look for a good water spot like this — and feel for a good weight, those are the juiciest.
i like to use my melon-baller because it’s just more fun. stick these in the freezer for ice cubes…
cut about 1/3 off the top and hollow out your watermelon…using a melon baller, or whatever –
rachael’s recipe said to simply press the mint into a little syrup mix. what i did was add my scooped out watermelon, a few sprigs of mint, and some agave nectar to my food processor and pulsated only a couple times, to break up the mint.
add mixture {strain out any chunks if you want} and 2.5 cups of {clear} rum per 12 adults to your “punch bowl” and toss in your frozen watermelon cubes when ready…
serve from your super cool punch bowl and super impress your guests. 🙂
